- 6 eggs, whisked
- ¼ cup pure cream
- sea salt and freshly cracked black pepper, to taste
- 1 Tbs fresh dill, finely chopped
- 40g smoked salmon, torn
- 4 fresh asparagus spears, chopped
- 40g goats cheese
- In a jug, whisk together eggs and cream, season with sea salt and freshly cracked black pepper. Add dill.
- Pour equal amounts of egg mixture into Sunbeam Pie Magic® dishes.
- Add salmon, asparagus and goat’s cheese.
- Close lid, turn on and cook for 10 mins.
- Remove and serve with extra smoked salmon, watercress salad and a squeeze of fresh lemon juice.
