- 1⅓ cups milk
- 1 egg
- 1 teaspoon vanilla bean paste
- 1 ¾ cups plain flour
- 1 teaspoon baking powder
- ½ teaspoon bicarbonate soda
- Butter, for cooking
- 2 lemons,quartered
- ¼ cup caster sugar
- In a jug combine milk, egg and vanilla. Set aside.
- In a separate bowl sift together flour, baking powder and baking soda. Add sugar.
- Make a well in the centre of the dry ingredients. Add wet ingredients and stir until just combined.
- Heat a large non-stick frying pan over medium heat. Melt a small amount of butter. Pour in ¼ cup of pancake batter and cook for 3-4 minutes or until bubbles appear on the surface. Turnover and cook for a further 1-2 minutes. Transfer to plate. Repeat with remaining mixture.
- Serve pancakes drizzled with fresh lemon juice and caster sugar.
