Chocolate Honeycomb Pancakes

- 1 cup milk
- 1 egg
- 40g butter, melted
- 1 cup plain flour
- 1/2 cup cocoa powder
- 1/4 cup caster sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- Chocolate Sauce
- 300g dark chocolate, chopped
- 1/2 cup thickened cream
- Extra butter, for frying
- Chocolate coated honeycomb, to serve
- In a small bowl combine milk, egg and butter.
- In a separate bowl combine flour, cocoa, caster sugar, baking soda and salt.
- Make a well in the centre of the dry ingredients and add milk mixture. Stir to combine.
- Heat a large nonstick pan over medium heat. Melt a small amount of butter.
- Add 1/4 cup of batter and cook for 3-4 minutes or until bubbles appear on the surface. Turn and cook for another 2 minutes. Set aside and repeat with remaining batter.
- Chocolate sauce: Combine chocolate and cream. Melt together until smooth.
- Pour chocolate sauce over pancakes and top with honeycomb. Serve.
