Chocolate Espresso Mousse Cappuccino

- 160g dark chocolate, chopped
- 1 x 30ml shot espresso or strong black coffee, cooled
- 300ml thickened cream whipped cream to serve
- Melt chocolate in a bowl over a saucepan of simmering water; cool.
- Place cooled coffee and thickened cream in a small mixing bowl. Beat with an electric mixer, or beaters, until soft peaks form. Reduce speed, and gradually beat in chocolate until just combined.
- Spoon mixture into stainless cups and chill for 3 hours or overnight. To chill quickly, place stainless cups into fridge while preparing mousse.
- To serve, spoon whipped cream over mousse and dust with chocolate.
